They are simple to make and stay fresh in an air tight container long after the summer harvest has gone. Here’s what you need to make your own cucumber chips- plus quick recipes for 5 different flavor options for your chips!
How to Make Cucumber Chips
If you’ve got cucumbers and a dehydrator you can make cucumber chips (in a pinch you can use your oven, but watch them closely as the cucumber tend to burn easily!)
Making cucumber chips is super easy- and the prep takes hardly any time at all.
Here’s what you do:
Step 1: Slice the cucumbers nice and thin. I use a mandolin slicer on the thinnest setting to get uniform slices.
Step 2: Toss the cucumber slices in 1-2 tsp of oil OR vinegar
Step 3: Place the slices on your dehydrator trays- close but not touching.

Step 4: Sprinkle with spices or flavorings- see below for 5 flavor options!
Step 5: Turn on the dehydrator to 135*F and set for about 4-6 hours or until completely dry and crisp.
Store the cucumber chips in an air tight container so that they retain their crispness.

5 Cucumber Chip Flavor Options!
BBQ Cucumber Chips
In a small bowl combine the following:
1 T paprika
2 tsp garlic powder
2 tsp onion powder
dash chili powder
2 tsp sugar
Sprinkle over cucumber slices before dehydrating.
Salt and Vinegar Cucumber Chips
Toss your cucumber slices in 2 tsp olive oil and 2 T vinegar (white, cider, white balsamic)
Place in the dehydrator and sprinkle with coarse sea salt before dehydrating
Salt and Pepper Cucumber Chips
Toss the cucumber slices in 2 tsp of olive oil.
Sprinkle freshly ground pepper and sea salt over the slices before dehydrating.
Ranch Cucumber Chips
In a small bowl combine the following:
1 tsp dried parsley
1 tsp dried chives
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp dried dill
dash of salt and pepper
Sprinkle over slices before dehydrating.
*Alternately sprinkle prepackaged Ranch seasoning mix on the cucumber slices.
Sour Cream and Onion Cucumber Chips
In a small bowl combine the following:
1 T buttermilk powder or dry milk powder
2 tsp onion powder
1 tsp garlic powder
1 tsp dill
1/2 tsp dried parsley
1/2 tsp salt
2 tsp sugar
Toss your cucumber slices in oil and sprinkle with this mixture before dehydrating.

Ingredients

Instructions

My dehydrator doesn’t have temperature controls, just turns on and off. Will it still be 4 to 6 hours?
I hate cucumbers. HATE them. After getting them all summer and getting tired of feeding them to my chickens, I tried the bbq cucumber chip recipe. Oh. My. GOSH! These are delicious! Like, addictive! How long can these be stored?
How long they store will depend on how air tight you can get them and if you have gotten them completely dry. If you have a food saver they should last 6-9 months. In a ziploc/jar stored normally they are probably best eaten in a couple weeks.
I have a freeze dryer, when you store the food correctly with the freeze dried foods they will keep for 25 years. The food needs to be sealed in a mylar bag with oxygen absorbers. Its not hard to do, you just need the supplies. 25 years is so much better then few years. Its no lie, the food taste just like when you sealed it.
How many cucumbers for this recipe? Cuz I have LOTS, lol!! I might have to double/triple/gadzoople!!

hi! i do not have a dehydrator nor an oven…can i just sun-dry the cucumbers? I am in Oman and it is very hot here so do you think it is possible? Thank you!
I have the same question and plan on trying/sacrificing at least 1 cuke to try it. Tomatoes sun dry well and yesterday I dried some stevia in about 9-10 hours. I do suggest putting something like cheesecloth over them to keep the bugs away.
can the oxygen absorbers be used if using the food saver method
If I dehydrate these cucumbers, seasoned, take them out as dry as possible, very crisp and crush to a powder for soups and dips…then seal with a vacuum sealer vs just into a mylar bag and sealed…what is the shelf life of both methods? And … if the cucs are prepared this way, dryed and put in not crushed to powder but vacuum sealed and or mylar with absorbers, what is the shelf life?
What temperature if using oven and how long
My dehydrator is very basic and doesn’t have a temperature setting, how long should I do it with mine?
The amount of cucumber was never listed. For example 4 cups of sliced cucumber

I am not a pro at this. So common sense will have to read between the lines . Most ovens do not go low enough to dry. There for go to the lowest temperature and in case yours does 165F. And you will need to take a wooden spoon or something handy to keep the oven door prompt open. Dry time will every to what the temp is. If you are dedicated to wanting to make them and by the way other foods to then check them at first to get a idea how it is going. And then peek at them every 30 minutes or so. Because the temperature usually doesn’t go down as far as dehydrators do. Burning is a possibility. Just keep watching also I put my dried veggies in a food saver bag when completely dried. They do last longer
Maybe don’t use the thinnest setting on the mandolin, on mine this is 1.5 mm which doesn’t account for the seeds – you end up with cucumber rings instead of slices. The next size up (3mm) seems the optimal size.
I love the taste of these cukes…..but mine were so hard to get off the racks of my dehydrator I tore them up….(I guess I should have sprayed the racks with pam first)…also mine are crunchy when I first took them off the racks but as soon as you put them in your mouth they got so chewy ….sticking to your teeth….but the taste was GOOD !!! I did the BBQ and the Ranch dip kind……any suggestions for me, so they will be crispy while you are chewing them….Thanks
Try using parchment paper next time.
Dehydrated vegetables will not get crisp, no matter how thin I sliced them or how long I dehydrate them.
Can the temperature be 115 F rather than 135 F? I have read any temperature over 117 F destroys the enzymes and many of the other nutrients of a raw cucumber.
If you’d rather keep the cucumbers raw, you can use a lower temperature- as long as the final product is completely dry.
Has anyone tried making these in the air fryer?
For the sour cream and chive chips, could you not use sour cream powder instead of milk powder for a real sour cream taste?
