Wild Berry Buckle


For the Batter

  • 1/4 cup butter
  • 3/4 cup sugar
  • 1 large egg
  • 3/4 cup milk
  • 2 cups flour
  • 2 tsp baking powder
  • 3 cups berries strawberries, blueberries, blackberries, etc

For the Topping

  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 1/2 tsp cinnamon
  • 1/4 cup butter


To make the cake:

  1. Start by preheating your oven to 375 F.
  2. Cream the butter and sugar until it is light and fluffy.
  3. Add the egg and mix well
  4. In a separate bowl, combine the flour and baking powder
  5. Alternately add the flour-mixture and milk, mixing between each addition.
  6. Gently fold in the berries.
  7. Pour the batter in a greased 9 x 13 in pan and set aside while you prepare the topping.

To make the topping:

  1. Combine the butter and flour in a bowl and blend with your fingers or a pastry blender until it resembles coarse crumbs
  2. Stir in the cinnamon and brown sugar
  3. Sprinkle on top of your cake batter
  4. Bake at 375 F for 35-40 minutes or until a knife inserted in the center comes out clean.
